Abstract

The issue of national food security requires serious attention in line with the increasing challenges of globalization, inequality in food distribution, and declining public interest in local cuisine. Indonesia faces various obstacles in formulating food policies that can meet the needs of the community equally. Therefore, the development of local food needs to be directed at the utilization of regional potential that is aligned with the values of the archipelago's insight. This research aims to find out the essence of archipelago cuisine among the people of the University of Education Indonesia so that it can be used as a parameter to develop local food so that it remains sustainable and not eroded by time. The method used was descriptive with a qualitative approach through the distribution of online questionnaires to seven students of the University of Education Indonesia. The results of the study show that archipelago insight plays an important role in the development of local food as a means of maintaining regional culinary identity. Traditional culinary diversity is seen as a form of local wisdom that needs to be preserved in order to remain relevant in the midst of globalization.  Through education, digital promotion, and strengthening the tourism sector, local food can continue to be preserved and developed as part of a sustainable national cultural and food security strategy in the face of globalization challenges.
