Abstract
Black pink shrimp was a type of small shrimp with the characteristics of a light brown color resembling the color of small coffee milk, namely 2-4 cm in length. A traceability system was a system that can track products from raw materials to consumers. Frozen peeled was a processed shrimp product that was in great demand on the global market. The aim of this research was to determine the processing flow of frozen breaded shrimp, the traceability system starting from the process of receiving raw materials, processing to the final product. The data analysis used was qualitative analysis. The data sources used are primary and secondary data. The data analysis techniques used are interviews, observation and documentation. The data collection methods used were observation and literature study. The sample used was blackpink shrimp. The results of the study show that the traceability system in the processing of frozen peeled Blackpink shrimp at PT. Dachan Mustika Aurora has been implemented well. This system includes internal and external traceability that allows product tracking from raw materials to end consumers. With strict recording and supervision in every production, the company can ensure that the products produced meet quality and food safety standards.
